Tomato Chutney
I sincerely hope you would share the same passion as me!This delicious sweet and spicy tomato chutney is a perfect accompaniment on array of dishes. i.e.:
Burger
Cheese
Cheese and biscuits
Grilled or cold Meat
Pate
Toast
And many more………
Ingredients
- 5 -10 Peppercorns
- 2 Star Anise
- 400gm Tomato
- 200gm Red Onion
- 200ml Red Wine Vinegar
- 6gm Garlic Puree
- 2 Red Chilli
- 25gm Fresh Ginger Puree
- 40gm Brown Sugar
Step No 1
Peel and finely chop the onions. Roughly chop the tomatoes and the chilli.
Put the chopped ingredients in a heavy-based pan. Add the rest of the ingredients.
Step No 2
Stir well and simmer for 25-30 minutes.
Turn the heat down and cook gently for about 60-90 minutes until the mixture is thick, dark, jammy and shiny.
Step No 3
To serve transfer into a bowl.
Step No 4
For storage, pour into a sterilised jar and allow to cool before storing.
Keeps up to 4-6 weeks in a fridge.
