Tomato Chutney

This delicious sweet and spicy tomato chutney is a perfect accompaniment on array of dishes. i.e.:

Burger
Cheese
Cheese and biscuits
Grilled or cold Meat
Pate
Toast
And many more………

Ingredients
  • 5 -10 Peppercorns
  • 2 Star Anise
  • 400gm Tomato
  • 200gm Red Onion
  • 200ml Red Wine Vinegar
  • 6gm Garlic Puree
  • 2 Red Chilli
  • 25gm Fresh Ginger Puree
  • 40gm Brown Sugar
Step No 1

Peel and finely chop the onions.  Roughly chop the tomatoes and the chilli.

Put the chopped ingredients in a heavy-based pan.  Add the rest of the ingredients.

Step No 2

Stir well and simmer for 25-30 minutes. 

Turn the heat down and cook gently for about 60-90 minutes until the mixture is thick, dark, jammy and shiny.

Step No 3

To serve transfer into a bowl.

 

Step No 4

For storage, pour into a sterilised jar and allow to cool before storing. 

Keeps up to 4-6 weeks in a fridge.
