BLACK OLIVE TAPENADE

Tapenade, a Mediterranean cuisine.

This olive-based condiment is often eaten as an Hors d’œuvre appetiser.

Can be enjoyed as a dip, spread on crackers, or with crusty bread.  A classic accompaniment to a cheese board or antipasto platter.

Ingredients
  • 175gm Black Olives, Pitted
  • 10gm Garlic Puree
  • 20gm Coriander Pure
  • 1 Lemon Juice
  • 1 Lemon Zest
  • 10ml Cider Vinegar
  • 30ml Extra Virgin Olive Oil
  • 2gm Salt
  • Teaspoon Ground Pepper
Step No 1

In a mixing bowl, combine olives, coriander, garlic, cider vinegar, sprinkle some seasoning and olive oil.

Step No 2

Blitz the ingredients using a hand blender.

Blend until it has a smooth, creamy texture.

Step No 3

Add the lemon zest along with the lemon juice.

Step No 4

Then mix to combine together, to form a silky paste.

Step No 5

The paste is ready to pour into a serving bowl.

Step No 6

Spread over cheese crackers and serve.

Step No 7

Store leftovers in a jar and refrigerator for up to 2 weeks.
