Shammi Kebab

Shammi kebab is finely chopped meat, boiled with chickpeas and spices.

Formed into a small, round and flat shape discs.

Excellent as a starter.

Ingredients
  • 1 Egg, Beaten
  • 15gm Salt
  • 300ml Water
  • 250gm Chickpeas, Soaked & Boiled
  • 60gm Ginger Puree
  • 500gm Beef Mince
  • 20ml Lemon Juice or ½ Lemon Juice
  • 10gm Ground Coriander

  • 10gm Ground Cumin

  • 20ml Red Chilli Sauce

  • 40gm Fresh Mint puree
Step No 1

Add the meat in a saucepan, together with the dry spices, chilli sauce, mint and ginger puree, lemon juice and season with salt.

Then top up with water.

Stir well to combine all the ingredients together. 

Step No 2

Bring to a boil.

Cover the saucepan and cook for about 25 to 30 minutes, until most of the liquid has reduced.

Step No 3

Chop one shallot, 3 green chillies and handful fresh coriander.

Step No 4

Pour the meat mixture into a food processor jug.

Add the chopped shallots, green chillies and fresh coriander. 

Finally pour in the boiled chickpeas.

Step No 5

Cover the jug with a lid and process the mixture to a smooth paste.

Step No 6

Scoop a tablespoon of the mixture in your hands and form into a small round flat shape discs.

Dip each disc directly in a small bowl of egg wash, then chill for 25 to 30 minutes. 

Step No 7

Heat some oil in a frying pan.

Shallow fry until golden brown on each side.

Step No 8

Serve the warm with a sauce of your choice with a leafy salad.
