Spicy Scotch Egg (Nargis Kebab)

Spicy Scotch egg (Nargis kebab) is principally the predecessor to the English Scotch egg.

Can be served warm or cold.

Perfect snack for a picnic or as a starter.

Ingredients
  • 1kg Lean Lamb Mince
  • 30ml Oil
  • 7 Eggs, soft boiled & shelled
  • 20ml Lemon Juice
  • 20gm Ginger Puree
  • 10gm Garlic Puree
  • 1 Egg/beaten
  • 3 Shallots/Peeled & Chopped
  • Mixed Ground Spices:
  •     15gm Coriander
  •     15gm Cumin
  •     15gm Red Chilli
  •     20gm Masala
  •     15gm Salt
  • For coating:
  •     2 Eggs/beaten/seasoned
  •     Plain Flour/seasoned
  •     Breadcrumbs/seasoned
Step No 1

Add the mince in a large bowl, season with mixed ground spices and lemon juice.

Step No 2

Mix the ingredients together, until all combined.

Step No 3

Cover with a Clingfilm and chill for 30 minutes.

Step No 4

In the meantime pour some oil in a frying pan and add the shallots and fry on a low heat, stir well.  Cook for a minute.

Step No 5

Then add a pinch of salt; this helps to draw the moisture and soften the shallots.

Fry for a couple of minutes.

Add ginger and garlic puree, blend well and cook for 2 to 3 minutes.

This process will help to release the aroma.

Turn off the heat and set aside to cool.

Step No 8

Remove the Clingfilm over the chilled mince and pour one beaten egg. 

Incorporate the egg with the mince.

Egg helps to bind the ingredients together.

Step No 9

To finish, add the cooked shallots and amalgamate thoroughly, until all combined.

Step No 10

Take a portion of the mince mixture and flatten by pressing gently between your palms.

Then place one soft boiled egg in the centre, mould and shape the mince for even coverage.

Step No 11

Repeat this process until all the eggs have been covered in the mince mixture.

Step No 12

To coat the balls, prepare 3 separate bowls.

Place First bowl with 2 beaten eggs, second bowl with plain flour and third with breadcrumbs.

Season each bowl with some salt.

Step No 13

Roll each ball in the flour, the egg and breadcrumbs, pressing the breadcrumbs into the ball.

Step No 14

Set aside until all of the eggs have been breaded.

Step No 15

Mist each ball with plenty of oil.

Step No 16

Bake into a preheated oven at 180°C/Fan for 25 to 30 minutes, until golden brown.

Step No 17

Serve as a starter with some salad.
