British Scones

Scones can be both sweet and savoury.

While some scones are potentially sweetened with sugar or fruit, others are made with savoury ingredients such as cheese or herbs.  The tops of the scone is glazed with egg wash for a golden brown and a shiny crust. 

A traditional British scone is typically round.  While often round, can indeed be shaped into various forms, including cylinders and triangles.

Scones have a typical flaky texture and are perfect for enjoying with butter and jam.

Ingredients : To make 12 Scones
  • 450g Self-Raising Flour
  • 10gm Baking Powder
  • 100g Cold Butter, diced
  • 50gm Caster Sugar
  • 50gm Sultanas (optional)
  • 2gm Salt
  • 300ml Cold Full Fat Milk
  • 1 Egg Yolk, Whisked
  • 8cm Round Cutter
Step No 1

Using chilled butter and milk when making the dough, helps to create a flaky and tender texture.

Add flour, cold butter, baking powder, salt and sugar in a mixing bowl. 

Step No 2

Use your fingertips to rub the ingredients together until the mixture resembles breadcrumbs.

Step No 3

If using sultanas, add to the mixture now, and mix together.

Step No 4

Gradually add the milk.

Use a butter knife to softly stir together.

The texture should be quite wet and sticky. 

Step No 5

Lightly flour the work surface and gently place the dough onto the floured area.

Using a light hand, work the dough until it just comes together.

Step No 6

Delicately flatten dough to an even 2-inch thick layer.

Step No 7

Select the desired cutting tool and cut into shape.

Step No 8

Place on a lined baking tray.

Step No 9

Brush the tops with the egg yolk.

Keep it chilled for 10 to 15 minutes, while pre-heating the oven to 1800C /Fan.

Step No 10

Bake for 15 to 16 minutes, until golden brown.

Step No 11

Serve warm with butter and jam.
