Soft Polenta

Polenta is a classic Italian dish.

Ground yellow corn.

Cooked in boiling water or stock.  Enhanced with butter and cheese to create a mushy, smooth and creamy texture.

Served with a meat or vegetable sauce.

Ingredients
  • 150gm Polenta Flour

  • 20-30gm Parmesan, finely grated

  • 40gm Butter, Diced

  • 3gm Salt

  • 600ml Water

Step No 1

Pour the water into a saucepan.  Or use chicken stock in place of water to enhance the flavour

Turn on the heat and bring the water to a boil.

Step No 2

Gradually stir in polenta flour to the boiling water.

Stirring constantly.

Step No 3

Reduce the heat and whisk briskly to remove any lumps.

Cook for a minute or two until the polenta has thickened.

Step No 4

Add the diced butter, whisk to combine.

The butter gives a smooth velvety texture.

Season the polenta with some salt and mix together.

Step No 5

Turn off the heat.

To finish the dish, scatter finely grated cheese.  Blend the cheese into the mixture.

Parmesan cheese gives it a rich and creamy taste.

Cover the saucepan with a lid.  Set aside for a couple of minutes to allow the cheese to melt into the polenta.

Step No 6

Ready to serve.

Served with lamb Ossobuco.
