Chicken Pilau Rice

Pilau is a rice dish cooked in stock.

Best served plain.

However, you could serve with some yogurt and a side salad.

Ingredients
  • 1 Large shallot, Finely Chopped

  • 12gm Salt

  • 500gm Chicken Thigh Fillets, Cut into Bite-size pieces

  • 6gm Garlic Puree

  • 10gm Ginger Puree

  • 10-12 Cardamom Pods

  • 12gm Cumin Seeds

  • 500ml Chicken Stock

  • 200gm Basmati Rice, Soaked

Step No 1

Soak the rice for about 15 minutes.

Then heat some oil in a non-stick saucepan, add chopped shallots. 

Fry the shallots until translucent.

Step No 2

Sprinkle some salt.

Continue frying the shallots for about 2-3 minutes.

Step No 3

Transfer chicken into the saucepan and stir to mix in with the shallots.

Step No 4

Top up with garlic and ginger puree.

Combine the puree and chicken together, then sear the chicken for about 5 to 6 minutes.   

Step No 5

Drop in the cardamom pods and cumin seeds.

Step No 6

A quick stir then pour in the chicken stock.

Step No 7

Mix all the elements together and cover the saucepan with a lid.

Boil and cook the chicken for about 8 to 10 minutes. 

Step No 8

Uncover the saucepan.

Drain the soaked rice and add to the saucepan.

Step No 9

Combine together and put the lid back.

Once the stock has boiled reduce temperature to the lowest setting.

Cook for 20 minutes to allow the rice to gradually absorb in the liquid.

DO NOT uncover the lid at any point, as the steam needs to build up to cook the rice.

Step No 10

After 20 minutes, turn off the heat.

Allow to stand for 5 minutes with lid still covered, as this process lets any steam to soak into the rice.

Do not be tempted to uncover the lid!!

The rice is ready to be served.

Serve on a plate with some yogurt.
