Lentil Fritters (Pakoras)
I sincerely hope you would share the same passion as me!These mouth-watering lentil fritters are commonly deep fried or baked in an oven.
The batter is made of soaked lentil puree, gram flour, yogurt, fresh & dried spices such as salt, chili, ginger, garlic and coriander.
Served with salad, Indian chutney or a dipping sauce of your choice.
Ingredients
- 125gm Mung Lentil (Yellow Lentil)
- 125gm Urad Lentil (White Lentil)
- 100-150ml Cold Water
- 40gm Gram Flour (Chickpea flour)
- 50gm Yogurt
- 5gm Green Chillies chopped or pureed
- 5ml Lemon juice
- Handful Coriander chopped
- 30gm Dried Onions OR 6gm Fresh Onions chopped
- 5gm Garlic paste
- 5gm Ginger paste
- Pinch of Turmeric powder
- 5gm Cumin Powder OR Cumin Seeds
- 10gm Salt
- 5gm Bicarbonate of Soda
- Oil for frying or baking
Step No 1
Wash and soak the lentils overnight. Then drain all of the water and rinse well.
Pour the lentils into a blender and add 100ml of water. Blitz to a coarse texture until it reaches a dropping consistency.
Leave to rest for 15 minutes to allow the lentils to soak in the liquid.
Step No 2
After 15 minutes add the rest of the ingredients except Bicarbonate of Soda. Blitz to mix the ingredients together. If the mixture is too thick, add the remainder of the water.
For soft and crispy fritters you need the mixture to be smooth and light in colour.
Pour the mixture into a bowl. Cover with a Clingfilm and leave to rest for a further 15 minutes.
After 15 minutes remove the Clingfilm and add in the Bicarbonate of Soda and stir well.
Step No 3
To fry the fritters, heat the oil in a pan.
Using a tablespoon drop small portion of the batter into the pan.
Fry in batches, until golden brown and crispy.
Step No 4
If you wish to bake the fritters then preheat the oven to 180C /Fan.
Add some oil in a muffin tray and heat the tray with the oil in the oven for about 5-6 minutes. Spoon the batter into the hot muffin tray. Bake for 10-12 minutes or until golden brown and crispy.
Serve as a side with salad or with your choice of dipping sauce.
