Mung Lentil Curry

Whole mung beans have green skin. 

During processing, the green skin is removed and split in half.

The result is a pale yellow small bean which can be cooked in a variety of ways.

Ingredients
  • 300gm Mung Lentil (Yellow Lentil)
  • 1 Tablespoon Tomato paste
  • 1 Teaspoon Cumin Powder
  • 1 Teaspoon Coriander Powder
  • 1 Teaspoon Turmeric Powder
  • 1-2 Teaspoon Salt
  • 1½ Tablespoon oil
Step No 1

Wash and rinse the lentil until the water runs clear.  Then leave to soak overnight. 

Step No 2

The next day drain, rinse and add the lentil in a saucepan with some fresh water.  Bring to the boil until soft and tender. Almost mushy texture.

Step No 3

In the meantime heat the oil in a frying pan.  Add all the spices to the pan.  Stir and cook for a minute.  Then add the tomato paste to the pan.  Cook for a further 2 to 3 minutes. 

Take off the heat.

Step No 4

Pour the spice mixture over the cooked lentil.  Stir and cook for a couple of minutes. 

Step No 5

Lentil curry is ready to serve.

Step No 6

Can be served plain, or with some boiled rice.

Can even be served with a flat bread.
