Kheer - Rice Pudding
I sincerely hope you would share the same passion as me!Kheer is a traditional Asian pudding, made of rice, milk, sugar and spices.
Ingredients
- 225gm Rice

2L Full Fat milk plus 200ml Double Cream

125gm Sugar

40gm Flaked Almonds for garnish

20-25 Green Cardamom Pods
Step No 1
First of all wash the rice and soak for about 20 minutes. Then drain the soaking water.
Pour the milk and cream mixture in a pan.
Add cardamom pods to the milk.
Bring to a boil.
Step No 2
Add the drained rice to the pan and stir well.
Cook the rice for about 15 to 20 minutes.
Every couple of minutes give it a stir to prevent rice from sticking at the bottom of the pan.
Add in the sugar. Stir until sugar is dissolved.
Cook the rice for about 5 more minutes to thicken.
However, it will also thicken up as it cools, but you can loosen it up a bit by adding a little more milk.
Step No 3
Pour into a serving dish and sprinkle nuts on the top.
