HONEY CAKE

Ingredients
  • 300gm Butter

  • 250gm Honey

  • 300gm Self-raising Flour

  • 80gm Dark Muscovado Sugar

  • 12gm Mixed Spices

  • 5gm Baking Powder

  • 3 Eggs, Beaten

  • 7” Lined Cake tin

Step No 1

Add the butter, honey and sugar in a saucepan.

Step No 2

Melt over a low heat until sugar has dissolved.

Pour the liquid into a heat-resistant jug and set aside to cool for 30 to 45 minutes.

Step No 3

Pour the beaten eggs into the butter and honey mixture.

Whisk until a thick and voluminous liquid is created.

Step No 4

Add the flour, mixed spices and baking powder in a bowl and mix together.

Step No 5

Pour in the egg and honey mixture.

Step No 6

Whisk briskly until a smooth and runny batter is formed.

Step No 7

Pour the batter into the lined cake tin.

Step No 8

Bake in a pre-heated oven at 150C Fan.

Bake for about 45 to 50 minutes, until well risen and golden brown.

Step No 9

Use a sharp serrated knife to cut a slice and serve.
