CARROT DESSERT (Carrot Halva)
I sincerely hope you would share the same passion as me!This delicious mouth-watering dessert is a great choice to enjoy with your family, during the Ramadhan season.
Made with grated carrots, milk, sugar and ground cardamom.
Served warm or room temperature, garnished with flaked almonds.
Ingredients 10 to 15 servings

325gm Brown Sugar

150gm Milk Powder

2kg Grated Carrots

180gm Clarified Butter

80gm Flaked Almonds

20gm Ground Cardamom

7gm Lemon Juice
Step No 1
In a large saucepan heat the butter and add the carrots.
Step No 2
Fry until all the liquid has evaporated.
Stirring occasionally to prevent sticking.
Step No 3
To intensify the aromas, crush the cardamom pods and extract the seeds.
Grind to a fine powder consistency.
Step No 4
Sprinkle the ground cardamom over the cooked carrots and mix well.
Step No 5
Gradually add the milk powder, stir until evenly distributed.
Step No 6
Drizzle the lemon juice.
Finally sprinkle sugar over the mixture.
Step No 7
Carry on cooking until all the sugar has dissolved. Stirring occasionally to avoid sticking to the bottom and burning.
The dessert is cooked once the mixture is thick and pulls away from the sides of the pan.

Serve warm, topped with flaked almonds.
