Steamed Cod with Romesco Sauce
I sincerely hope you would share the same passion as me!Romesco sauce is rich with tomatoes and roasted red peppers.
Thickened with toasted almonds and bread. Enriched with smoked paprika, garlic and vinegar.
Roasted red peppers burst of smoky flavours, making the sauce exceptionally adaptable. It can be used as a dipping sauce but equally delicious with fish, seafood, meats, grilled or roasted vegetables.
Ingredients For the Sauce
- 200gm Roasted Red Peppers
- 100gm Almonds, Blanched

3 Tomatoes, Roughly Chopped

10gm Salt

4gm Smoked Paprika

Slice Bread, Cubed

8gm Garlic Pureé

12ml Red Wine Vinegar

50ml Olive Oil
Step No 1 Preparing the Sauce
Heat some oil in a pan, add the blanched almonds. Stir so that the oil coats the almonds.
Place the cubed bread over the almonds.
Lightly toast, until golden brown.
Step No 2
Blend the toasted almonds and bread to a coarse consistency.
Put aside a quarter of the mixture for the fish topping.
The rest will be used to make the sauce.
Step No 3
Drizzle olive oil in a pan, add the tomatoes and the garlic pureé.
Cook for 2 to 3 minutes, until soft and mushy.
Step No 4
Blend together the roasted peppers, red wine vinegar, salt, smoked paprika and the tomato mixture, whiz until smooth.
Step No 5
Finally add the almond crumbs.
Step No 6
Blitz to a smooth and thick sauce.
If sauce is too thick for your liking, then just add more oil and vinegar.
Ingredients For the Fish
- Greased Glass Dish
- Roasted Almonds & Bread Crumbs
- Zest of lemon
- 2 Knobs of Butter
- 2 Cod Steaks
Step No 7 - Preparing the Fish
Add the lemon zest to the saved crumbs. Mix and set aside.
Step No 8
Place the fish onto a greased glass dish add a knob of butter on each fish steak.
Step No 9
Cover with Clingfilm, pierce the top with a knife.
You may fry your fish, if you like, but I prefer mine steamed.
Put the fish in the microwave and steam for 1½ to 2 minutes.
Step No 10
Serve the fish by spreading the sauce onto a plate with some steamed vegetables.
Step No 11
Then place the cod on top, sprinkle the zesty crumb over the fish.
