Chocolate Cake

Chocolate sponge cake, sprinkled with chopped nuts.

Ingredients
  • 125gm self-raising flour
  • 3 large eggs
  • 185gm softened butter
  • 50gm cocoa powder
  • 4gm vanilla extract
  • 4gm baking powder
  • Pinch of salt
  • 175gm caster sugar
Method

In a large mixing bowl add all the ingredients together and mix for 2-3 minutes; long enough to make a smooth paste.

Line a 7” cake tin.

Spoon the mixture into the tin.

Sprinkle a few chopped nuts.

Bake for about 35-40 minutes in a 180°C preheated oven. Bake until well risen. The top should spring back when lightly touched with a fingertip.

Let the cake cool before serving.
