Baked Chipotle Chicken

Chicken breast marinated with a Mexican smoked paprika paste, “CHIPOTLE”. Baked with new potatoes and steam vegetables.
Serve it in wraps, sandwiches or with salads.
Ingredients

60gm Chipotle Sauce

3 Chicken Breast

6 – 7 New Potatoes

Oil for Drizzling
Step No 1
Butterfly the chicken breast.
Using a sharp knife cut the chicken breast almost in half, along one long side of the breast, leaving breast attached at one side.
Open so it lies flat.
Cover the chicken breast with chipotle paste.
Step No 2
Transfer the chicken into a bowl, cover with cling film.
Chill overnight.
Step No 3
Remove chicken from the bowl. Place side by side in a large greased baking tray.
Add 6-7 halved new potatoes to the tray.
Drizzle oil over the chicken and potatoes.
Step No 4
Bake for 30 – 45 minutes in a preheated oven to 180C /Fan, until the chicken and potatoes are cooked.
Serve as is or with potatoes, or with vegetables.
