English Cheese Scones
I sincerely hope you would share the same passion as me!Scones are perfect as a light snack.
Best enjoyed warm straight from the oven.
They are great as a side for a hearty meals like soups, stews or salads.
Can freeze them for later use.
Ingredients : To make 12 Scones
- 250g Self-raising Flour
- 1 Egg whisked with 160ml Milk
- 70gm Chilled Butter, diced
- 4gm Salt
- 2gm Cayenne Pepper
- 8gm Baking Powder
- 125g Cheddar Cheese, grated
Step No 1
In a large bowl mix together the flour, salt, cayenne pepper and baking powder.
Step No 2
Add butter to the flour mixture.
Rub the butter and flour gently between the fingertips and thumbs, continuing until the mixture resembles coarse breadcrumbs.
Step No 3
Fold in the grated cheese and mix together. Make a well in the centre of the flour.
Step No 4
Gradually pour in the whisked egg and milk into the flour.
Using a butter knife lightly mix the flour and the liquid ingredients, drawing the flour from the inside walls of the well.
The texture should be quite wet and sticky as it helps to produce lightest and fluffiest scones once baked.
Turn the dough onto a floured surface. Using a light hand, work the dough until it just comes together.
Step No 5
Lightly pat out the dough using the palm of your hands into a 6” round and 1” thick.
Using a 3” cutter, cut out 12 circular portions.
Step No 6
Transfer them onto a lined baking tray. Brush the tops with some milk.
Leave them in the fridge while preheating the oven.
Step No 7
Preheat the oven at 200C /Fan and bake the scones for 12-15 minutes, until golden brown.
