Chicken Cacciatore (“Kattja to re”)

Chicken cacciatore is an Italian dish.
Stewed in tomato sauce, peppers, mushrooms and Italian herbs.
Served with pasta.
Ingredients
- 4 Large Chicken Thighs, Boned/Skinned/Diced
- 6-10 Mushrooms, Quartered
- 3-4 Fresh Rosemary Sprigs
- 8gm Salt
- Teaspoon Italian Dried Herbs
- Large Roasted Red Pepper, Sliced
- 50gm Tomato Paste
- 8gm Garlic, Puree
- 20gm Ginger, Puree
- 1 Fresh Red Chilli, Roughly Chopped
- 400gm Chopped Tomatoes
- 150ml Chicken Stock
- 50ml Cooking Oil
Step No 1
Heat some oil in a saucepan and add the diced chicken thighs, fresh rosemary sprigs.
Cook for a minute or two.
Step No 2
Then add garlic and ginger puree.
Season with some salt.
Stir and mix together.
Cook for two to three minutes, to ensure the chicken is cooked.
Step No 3
Add the tomato paste.
Combine until the chicken is completely covered with the paste.
Cook for a minute or two.
Step No 4
Flavour the dish with roughly chopped chillies and sliced peppers.
Sprinkle dried herbs and pour the chopped tomatoes.
Give it a quick stir.
Step No 5
Drop in the quartered mushrooms.
Pour in the chicken stock and give it a final stir.
Step No 6
Cover with a lid and cook for about four to five minutes.
Step No 7
Stir cooked pasta into the sauce over the heat before removing and serving.
