Cinnamon & Sultana Buns

Sweet spiced buns.

Prepared using flour and yeast.

Enhanced with ingredients like cinnamon, eggs, milk, sugar, butter and sultanas.

They are typically enjoyed warm.

Cut into half and spread with some butter.

Ingredients
  • 50gm Butter
  • 1 Egg, Beaten
  • 320ml Warm Milk
  • 500gm Strong White Flour
  • 300gm Sultanas & Mixed Peel
  • 75gm Sugar
  • 8gm Salt
  • 10gm Ground Cinnamon
  • 7gm Yeast

Step No 1

Warm the milk.  Set aside until it cools down to room temperature.

Step No 2

Add the flour in a mixing bowl together with sultanas and mixed peel, sugar, salt, yeast, butter and sprinkle ground cinnamon. 

Step No 3

Knead with a dough hook for about 2 minutes to initially mix the ingredients.

Step No 4

Stop the mixer and add the milk and beaten egg.

Step No 5

Proceed kneading for another 2 to 3 minutes until the dough is smooth and sticky.

Step No 6

Tip the dough onto a floured surface. Knead and Stretch.

Then hold the dough with one hand and stretching with the other.

Fold it back on itself.

Repeat a couple of times, until dough is smooth and elastic.

Step No 7

Transfer the dough into a greased bowl, cover with cling film.

Leave to rise until doubled in size, for approximately an hour.

Step No 8

When risen tip the dough back onto a floured surface.  Knead the dough into a sausage shape and then divide the dough into 12 even portions.

Roll each piece into a smooth ball.

Arrange the buns on a lined baking tray.

Leave enough space to allow the buns to rise and expand.

Step No 9

Cover with cling film and allow to prove for another hour.

Step No 10

Uncover the baking tray.

Bake in a pre-heated oven at 200C, Fan for 15 minutes until golden-brown.

Step No 11

Gently separate the buns apart to serve. These buns are fluffy and soft on the inside.

Cut the bun in half and spread some butter before serving.
