African Doughnut

Mandazee is one of the principal dishes in the cuisine of the Swahili people who inhabit the Coastal Region of Kenya and Tanzania.
Mandazee is a form of fried bread made from a flour dough.
They are similar to doughnuts, but without a hole in the centre.
They can be glazed with plain sugar or icing sugar.
Ingredients – To make 20 – 25 Doughnuts (5cm in diameter)
- 550gm Self-Raising Flour
- 4gm Yeast
- 155ml Warm Water
- 155ml Warm Milk
- 150gm Sugar
- 3gm Salt
- 40ml Oil
- 4gm Cardamom Powder
- Oil for frying
Mix all the ingredients in a large mixing bowl.
Knead in a mixer with a dough hook for about 4-5 minutes until it is soft and pliable.
Transfer the dough into a greased bowl.
Cover with a cling film and set aside for 1-2 hours in a warm place until doubled in size.
Punch down the risen dough to release air bubbles.
Divide the dough in half. Roll out each half to about ¼” thick.
Cut into 5cm wide discs and transfer onto a tray to prove for about an hour.
Drop the discs into a hot oil pan.
Fry the doughnuts until golden brown on both sides.
If prefer sprinkle icing sugar before serving.
