VEGETABLE PAKORAS (Fritters)
I sincerely hope you would share the same passion as me!Pakora is a delicious vegetable snack, coated in a thick spiced batter and deep fried.
The batter consists of water, chickpea flour, rice flour, cornflour and ground spices.
Rice flour contributes to a lighter and crispier fritter, as it absorbs less oil when frying.
Whereas cornflour primarily enhances the crispiness of the batter.
Ingredients
- 3gm Ground Red Chilli
- 6gm Ground Coriander
- 6gm Ground Cumin
- 10gm Garam Masala
- 20gm Himalayan Salt
- 400gm Chickpea Flour
- 600ml Water
- 100gm Rice Flour
- 5gm Baking Powder
- 20gm Cornflour
- 1 Red Pepper
- 3 Potatoes
- 2 Onions
- 3 Green Chillies
- Fresh Coriander Leaves
- Fresh Mint Leaves
Step No 1
Peel and slice the potatoes lengthways.
Step No 2
Then cut the slices into strips about 0.5cm wide.
Step No 3
Rinse and soak in cold water for half an hour.
This helps to draw out the starch.
Step No 4
Remove the dry outer layers of the onions and trim off the stem ends.

Then cut the onions very thin, almost paper-like slices.
Step No 6
Transfer the sliced onions into a mixing bowl.
Add chopped coriander and mint leaves, including one finely chopped red pepper and green chillies.

Finally drain the potatoes and pour into the mixing bowl.
Mix together to ensure the vegetables are evenly spread.

Add some salt to enhance the flavour.
Then pour the ground spices.

Incorporate together.

Sprinkle cornflour over the mixture together with the rice flour.
Mix until well combined.
Step No 11
Leave to rest for 10-15 minutes, to allow the mixture to draw moisture from the vegetables.

Scatter the chickpea flour over the mixture then pour water in increments and mix thoroughly to achieve the desired consistency.
Step No 13
Rest the flour to hydrate for 15 minutes, so that the water is fully absorbed; leading to a smoother texture.

After a 15-minute rest period add the baking powder.
Step No 15
Give the batter a final mix before frying to ensure the baking powder is evenly distributed and the batter is ready.
Step No 16
Heat some oil in a pan.
Using a tablespoon carefully drop several scoops of batter into the hot oil.
Step No 17
Fry for about 5 minutes on each side until golden brown and all the vegetables are cooked.
Serve with a sauce of your choice.
