FESTIVE EASTER BISCUITS

Celebrate Easter with the family and kids, making playful festive biscuits.

The biscuits are soft with a hint of almonds and vanilla.  Adorned with pastel-shade icing fondant.

Shaped into charming Easter-themed characters such as eggs, chicks and bunnies.

Ingredients - Makes 20 - 30 Biscuits
  • 180gm Butter, Softened
  • 150gm Golden Caster Sugar
  • 1 Egg
  • 80gm Ground Almond
  • 300gm Plain Flour
  • 15ml Vanilla Paste
  • 250gm White Fondant Icing
  • Food Colouring Gel
  • Milk
  • 4 Easter Theme Cutters
Step No 1

In a mixing bowl bring together the butter, golden caster sugar, plain flour, ground almonds, vanilla paste and an egg.

Step No 2

Blitz together to form a soft dough.

Step No 3

Transfer the dough onto a flat surface and shape into a disc.

Then wrap the dough in cling film and chill for 30 minutes.

Step No 4

Take the dough out of the fridge and divide into two equal portions.

Step No 5

Roll out one half of the dough to a ¼” thickness.

Then using a cutter, gently press an imprint into the dough.

Repeat the process with the other half of the dough.

Step No 6

Transfer the cut-outs onto a lined baking tray.

Leave a little space between each biscuit.

Step No 7

Bake in a pre-heated oven at 170C Fan, for 10-12 minutes. Cook until pale golden around the edges.

Allow to cool down completely.

Step No 8

In the meantime colour the fondant icing.

Take three small portions of white icing, and add an amount of food colouring to each portion.

Step No 9

Knead until the colour is evenly distributed.

Add more colouring as needed to achieve the desired shade.

Roll individual balls in readiness for shaping.

Step No 10

Using a rolling pin, roll out each coloured ball and imprint shapes.

Step No 11

Cut out the relevant shape to match the biscuit.

Step No 12

Using a brush, dampen the top of the biscuit with milk.

Step No 13

Gently press the fondant onto the biscuit, smoothing out any wrinkles or air bubbles.

Repeat the process with the rest of the biscuits.

Step No 14

Finally create fancy designs with colour gels on icing.

Allow the icing and gel to set for about 2 hours, before serving.
