Fruity Tea Loaf
I sincerely hope you would share the same passion as me!A fruit loaf is an English bread. Delicious and moist. Lightly spiced and packed with plump dried fruit.
The fruit is soaked overnight, in freshly brewed black tea. Then flour, eggs, sugar and cinnamon powder is added to the fruit.
Enjoy a slice, warm or cold alongside a cup of tea. Equally delicious when slathered in butter.
Ingredients
- 2lb Loaf Tin, Lined

260gm Self-Raising Flour

350gm Mixed Dried Fruit

200gm Soft Dark Sugar

2 Eggs, Beaten

5gm Cinnamon Powder

350ml Black Tea, made with 2 teabags
Step No 1
Soak the mixed fruit with slightly cooled brewed tea.
Cover and soak overnight.
Step No 2
On the following day, uncover and stir well.
NB: Please do not drain off any of the excess liquid.
Pour in beaten eggs to the tea soaked fruit bowl, followed by soft brown sugar.
Combine together using a wooden spoon.

Sprinkle cinnamon powder.
Step No 4
Add the flour.
Step No 5
Mix all the ingredients well
Ensure there are no flour pockets in the mixture.

Pour the batter into the lined tin.
Step No 7
Bake for about an hour and a ¼ in a pre-heated oven at 160C, Fan.
To test if the cake is cooked, insert a clean skewer into the centre of the cake. The cake is ready if the skewer comes out clean.

Allow the loaf to cool for at least 30 minutes.
Step No 9
Slice a thick wedge and serve it as is.

Or spread with a little butter and serve with tea.
