Layered Coffee Jelly, Mascarpone Cheese & Coconut Dessert

Layered with coffee jelly, mascarpone cheese and coconut cream.
Topped with melted chocolate
Ingredients - Coffee Jelly
- 2 Clear Glasses
- 150ml Water
- 15gm Instant Coffee
- ¼ Teaspoon Agar Agar Powder
- 15gm Sugar
Step No 1
To make the Coffee Jelly
Pour water in a saucepan, and turn on the heat. Then add instant coffee and sugar.
Slowly sprinkle the Agar Agar powder.
Whisk continuously to avoid lumps.
Once boiled, turn down the heat and simmer for 2 to 3 minutes.
Step No 2
Place two glasses on a plate.
Slightly tilted and supported with a tea towel.
Pour the jelly mixture into the glasses and chill for 15 to 20 minutes until the set.
Ingredients - Cream Mix
- 10ml Vanilla Paste

25gm Sugar

100gm Mascarpone Cheese

1 Egg White

170ml Coconut Cream

½ Teaspoon Agar Agar Powder
Step No 3
To prepare the Cream Mix
Pour the egg white and sugar in a mixing bowl.
Using a hand held mixer, whisk to stiff peaks.
Step No 4
Add the mascarpone cheese and whisk until smooth.
Step No 5
Pour the coconut cream into a saucepan together with some vanilla paste. Give it a quick stir.
Turn on the heat. Slowly add Agar Agar powder. Whisking continuously to avoid lumps.
Cook for 2 to 3 minutes. Remove from the heat.
Step No 6
Pour the mixture into the cream cheese and whisk until combined.
Remove the chilled glasses from the fridge and pour the cream mixture over the jelly.
Return the glasses into the fridge and chill to set for at least an hour.
Ingredients - Chocolate Topping

10gm Cocoa Powder

60ml Water

15gm Butter
-
20ml Glucose Syrup

30gm Dark Chocolate
Step No 7
To Make the Chocolate Topping
Place the chocolate pieces and butter in a bowl and set aside.
Step No 8
Mix together some water, cocoa powder and glucose syrup in a saucepan.
Whisk to combine the ingredients.
Heat the mixture, stirring constantly.
Boil for 30 seconds and then turn off the heat.
Step No 9
Pour the warm liquid over the chocolate and butter.
Whisk until the chocolate has melted.
Step No 10
The texture should be smooth and silky.
Set aside to cool, for 30 to 45 minutes.
Step No 11
Remove the chilled glasses from the fridge.
Fill the glasses with the chocolate mixture.
Keep chilled until ready for serving.
