Vegan Sweet Potato & Chocolate Mousse

This vegan dessert is velvety, healthy and delightful to eat. 

Made with sweet potato, cocoa powder and coconut cream.

Ingredients
  • 500gm Sweet Potato
  • 50gm Cocoa Powder

  • 130gm Soft Butter

  • 180gm Coconut Cream

  • 40gm Soft Brown Sugar

Step No 1

Microwave the sweet potato until soft and tender, for about 6 to 10 minutes; depending on the size.

Once cool scoop out the flesh and discard the skin. 

Step No 2

Then place the mashed potato into a mixing bowl

Step No 3

Add the remaining ingredients.

Step No 4

Using a hand mixer blend until well incorporated and smooth.

Step No 5

Divide between individual serving dishes and top with toasted almonds.

Step No 6

Chill until ready to serve.
