Ugali (White Corn Flour Dough)

Ugali is Tanzania’s staple food.  

It is eaten widely across Africa, where it has a different local name.  

Firm dough-like consistency, made of coarse ground white corn flour, cooked with water to a stiff dough.

Ingredients
  • 180gm White Corn Flour, Coarse Ground

  • 6gm Salt

  • 360ml Water

Step No 1

Heat 300ml of water with salt in a non-stick saucepan.

Step No 2

In the meantime mix corn flour and 60ml of water together. 

Stir well to remove any lumps.

Step No 3

Pour the liquid into the saucepan.

As soon as the liquid begins to bubble, stir using a flat wooden spoon, until it begins to form a thick consistency.

Step No 4

Keep stirring by pressing the mixture against the side of the saucepan to help break up any lumps.

Stir and cook until the mixture begins to come away from the sides of the pan.

Step No 5

Ready to serve.

Served on a plate, formed in a semi round shape.

Step No 6

Accompanied with spinach & Okra Stew.
