English Rice Pudding
I sincerely hope you would share the same passion as me!In the United Kingdom, rice pudding is a dessert typically made with short-grained rice.
A specific type of rice is used for this pudding called “pudding rice”.
The rice is similar to Arborio rice (Risotto rice), its grain is round and short, and when cooked produces a creamier consistency.
Ingredients
- 50gm Caster Sugar
- 100gm Pudding Rice
- 250ml Double Cream
- 30gm Butter, cut into cubes
- 750ml Full Fat milk
- Teaspoon Nutmeg, grated
- Ovenproof Dish, 8” x 8”
Step No 1
Lightly butter around the inside of an ovenproof dish.
Step No 2
Spread the rice in the buttered dish.
Sprinkle sugar over the rice then pour double cream and milk.
Drop the cubes of butter over the top.
Finally scatter grated nutmeg over the liquid.
Step No 3
Bake in a preheated oven at 170C Fan.
Bake for an hour, until the rice is cooked and has a thick, creamy consistency.
It is ready when a brown skin is formed on top.
Turn off the oven. Leave the pudding in the oven for 30 – 45 minutes to allow the liquid to soak into the rice.
Step No 4
Transfer into a dessert bowl and serve.
