Sausages & Beans Casserole

Casserole made with sausages, a selection of beans and Italian herbs. 

A hearty meal, something to warm yourself up on a chilly evening.

Can be served on its own, with a crusty bread or with polenta (Italian Cornmeal porridge).

Ingredients
  • 350gm selection of beans (Dry, Soaked and Boiled)

  • 1 Teaspoon Salt

  • 1 Teaspoon Mixed Italian Herbs

  • 1 Teaspoon Dried Rosemary

  • 1 Teaspoon Garlic Paste

  • 1 Teaspoon Ginger Paste

  • 8 Sausages, cut into Chunks

  • 60ml Oil

  • 300ml Vegetable Stock, warm

  • 1 Shallot, Chopped

  • 2 Celery Sticks, Diced

  • 1 Yellow Pepper, chopped

  • 1 Carrot, Diced

  • 400gm Tinned Tomatoes

Step No 1

Heat oil in an oven proof saucepan.  Add the sausage chunks to the saucepan.  Shallow fry them until golden brown.

Step No 2

Then drop in the chopped shallots, diced celery sticks, chopped yellow pepper, diced carrots, garlic and ginger paste.

Stir well and cook over a gentle heat to soften the vegetables.

Add the mixed herbs, dried rosemary and salt. 

Stir to blend the herbs and seasoning together. 

Step No 3

Add the tinned Tomatoes and simmer for 2-3 minutes.

Step No 4

Pour in the vegetable stock.

Step No 5

Then finally add the beans. 

Give it a quick stir.

Cover the saucepan with a lid and transfer in a pre-heated oven at 180C /Fan for 30 – 45 minutes.

Step No 6

The casserole is ready to serve. 

Served with warm polenta (Italian Cornmeal porridge).
