Cauliflower & Potato Curry
I sincerely hope you would share the same passion as me!Cauliflower and potato curry (Aloo Ghobi) is a vegetarian dish made with potatoes (Aloo) and cauliflower (Ghobi).
Ingredients
- 1 small Cauliflower, cut into florets
- 2 large Potatoes, diced
- 50gm Shallots, chopped
- 30ml Oil
- 80gm Tomato paste
- 1 Teaspoon Cumin Powder
- 1 Teaspoon Coriander Powder
- 1 Teaspoon Turmeric Powder
- 1 Teaspoon Chilli Powder
- 2 Teaspoons Salt
Step No 1
Heat the oil in a saucepan over a medium heat and sauté the shallots until soften and translucent.
Step No 2
Stir in the spices to the sautéed shallots and cook. Stirring constantly for about 3 minutes, to incorporate the spices to the sautéed shallots. Pour in the tomato paste, stir and cook the paste until it darkens and the sauce thickens.
Step No 3
Add the diced potatoes, stir and cook for 2 minutes. Tip in the cauliflower florets, stir to combine, cover and simmer for 20 minutes, until the vegetables are tender.
Step No 4
Ready to serve.
Serve with some boiled rice.
