Punjabi Almond Slices with Semolina and Gram Flour

This is a classic Punjabi sweet.

It is prepared with semolina flour, gram flour, butter, condensed milk, and nuts.

The flour is roasted with butter, milk and nuts.

My mother loves this sweet. She often makes a massive batch to consume over the course of a few months.

Ingredients : To make 30-40 5cm Square Slices

360gm Semolina flour
180gm Gram Flour (chick pea flour)
100gm Finely Chopped Almonds for cooking
50gm Chopped Pistachios for topping (optional)
85gm Chopped Almonds for topping
600ml Condensed milk
250gm Butter
3gm Ground Cardamom

Step No 1

Heat the butter in a sauce pan and add the semolina flour.  Cook for about 15 minutes, stirring constantly to avoid burning or uneven cooking.

Gradually add the gram flour, stirring constantly on a low heat, until the mixture changes colour and the bubbles get bigger.

Step No 2

Add the ground cardamom and 100gm chopped almonds to the mixture and continue cooking, for 5 – 6 minutes.

Pour the condensed milk to the mixture and keep stirring until the mixture starts to thicken, and eventually begins to set.  When set take off the heat.

Step No 3

Pour the mixture onto a pre-greased tray and even out using hand gloves (to avoid burning), press down evenly with your palm. 

Sprinkle and 85gm finely chopped almonds and gently press onto the mixture. 

Step No 4

Set aside for about an hour to slightly cool down.  Then slice into 5cm squares with a sharp knife. 

Once the slices have completely cooled down, store them in an airtight container.
